I've been looking in to trying to make my diet more Low GI after first reading about it on here and also as anti inflammatory as possible. This isn't a weight related thing. Currently my diet consists massively of carbs, and bad carbs at that. Far too much white bread and other not so healthy foods.
I have some ideas of what this new diet can include, obviously lots of fruits (blackberries, strawberries, apples etc), pasta now and again in the place of bread, fresh non battered fish, sweet potatoes, plenty of veg, steaks, nuts etc etc
However, where I am struggling is finding things to take to work for lunch. For my whole working life i've always just taken sandwiches. A couple of days a week i'm thinking of maybe pasta with lots of tuna but the other days I haven't a clue. Any ideas would be welcome!

Omelettes are brilliant, zero carb and you can have a play with ingredients trying to find what you like best. Bit of a PITA to learn at first but once you get the hang of them really simple. Some people remove the yolk as it's got fatty acids or some dangerous certain daily mail killer in them.
Instead of a sandwich, how about putting stuff in a tortilla wrap?
The choice of fillings is just as plentiful as sandwiches so you'll find loads of things to suit your tastes/requirements.
And just as quick to cobble together as a sandwich.
Oh, and they are yummy!
Omelettes, as alrerady said, are great.
Very quick and easy to do and to learn, even if you've never done them before, (and if you cock it up you've only lost a couple of eggs) and open to all sorts of variety.

When we make things like Bolognese, Chilli, Enchiladas, Curry, Lasagne etc, we alway make huge amounts. Most things with pasta or rice can be warmed up easily in the microwave. Then we divide the left overs into lunch sized containers and freeze them.

I've got into a routine of a quick salad
Half a bag of mixed leaves
Half a dozen or so of halved fresh plum tomatoes
Small handful (20g) of flaked almonds or maybe crushed walnuts
1 tin (185g) of tuna
Lob it all in a tub, throw in a good helping of balsamic, job done.
If you have more time, maybe chop in an avocado and some spring onions, fresh chillis and coriander.
