The blue goatee

i've recently become a dad (save your applause)
now it is well known that when your youngster gets a blueish tinge to their lips and chin (ie the blue goatee) that they need to burp.
What physical mechanism takes place within the body that makes this so?
now before you all scream, "go to mumsnet" - I have, and all i see is 'you need to burp them, they have wind' followed by 'if they have wind, surely they need to poop' followed by 'awww, this is making me broody' Aaaaaargh
