Switching from calorie defecit to calorie surplus

Hi Chaps,
As part of my intended training goals, I've been eating at a calorie deficit most days since around the start of the year, with the intention of dropping from ~83kg to ~72kg (at height 5'11"). I'm now at ~74.5kg, so will be coming to the end of this objective in the next month or so. Once that's done, it's my intention to increase my lean mass by ~10kg if I can (effectively returning to my original weight but with much more lean mass).
Assuming that my training regime will be weight training twice a week, circuit training twice a week and two generic cardio sessions (e.g. spin/running) spread over 4 or 5 days, with 2-3 days rest a week, does anyone have any suggestions on the best way to structure calorie surplus? Do I simply eat excess calories each day, or do I target it based upon which days I burn the most calories?
It might sound like a daft question, but I guess I'm concerned about inadvertently adding superfluous fat mass after working hard to get rid of it.
