Got into the habit of chucking in some Old Passo Fajita mix with my chicken in a pan which I serve with loads of steam veg (so would be pretty bland otherwise)

Anything else I could mix myself to season it with...or is a little fajita mix not worth worrying about (the cals are fine...just full of salt)

We often use a Cajun spice mix, not sure of the salt content.

Just lately I've been mixing a stock cube with a bit of oil and rubbing the paste all over the chicken breast before going into a hot griddle pan, works quite well.

What about knocking up a quick tomatoes sauce? Tin of tom's, maybe some onion/garlic and some dried herbs...

Cooking chicken in bbq sauce for a few mins just before its cooked is nice, goes with rice etc.

Try a decent amount of seasoning and a sparing amount of dried or fresh tarragon, then a spoonfull or two of creme freche.

Dunn's River Jamaican jerk seasoning. If you can marinate it for a few hours, all the better.

I've had cajun spiced chicken again tonight, it's my current favourite meal.

Enough for two breasts (no sniggering at the back please)
2.5 tspns ground cumin
2 tspns smoked paprika
1 tspn ground black pepper
1 tspn oregano
1 tspn thyme
0.5 tspn salt
0.25 tspn cayenne pepper

You could make up a quick sauce with Patak's Madras.

Otherwise I prefer chicken breast grilled for texture, then a cheaty satay sauce of peanut butter let down with oil, 'Jamaican' chilli sauce and lime juice. Go big on the chilli and lime juice.

Cock is a normal West Indian term. Bull foot or Pig's Meat are often used terms too.

I've plumped for jerk chicken this week, my own concoction rather than the dunns river (which is really good stuff) along with rice and peas (well kidney and black eyed beans)

Try marinating the chicken in natural yogurt with some chopped garlic in it. Wipe off yogurt with a kitchen towel and season with some salt and pepper, then cook in the pan the normal way.
