Who would it be?
There's two guys I'd really like to spend some time with -
Phil Learney - I've been reading his stuff for years now, and really like his approach to things.
Elliot Hulse - Pretty much for the same reasons.
But if I had to chose just one, it would be Learney, without a doubt

Alberto Salazar at the Oregon Project campus (Mo Farah's coach and base). It'd be great to train with a top coach in an environment where everything is geared to performance, no "life" worries to get in the way. Of course, the OH, daughter, job, mortgage etc may have something to say about that

Bruce Lee - when he was alive
Arnie - in 1974ish
Werner Gunthor - in whatever year they filmed Préparation Physique (watch on YouTube)
Mariusz Pudzianowski - at any point when he was in his prime
Mike Tyson - 1986/7ish
Not sure if this is exactly what the OP meant but I'd mainly want to train with them to see just how awesome they really were and to experience some of the cool stuff they did in training.

As I'm into tennis it would be Roger Federer for sharpening my game.
For gym work, it would be Hugh Jackman's trainer.
I wouldn't want to train with any steroid abusing meatheads - wouldn't want to look like these guys in a million years. I'd much prefer to look on the right side of normal.

I'll name drop - given it's related, and I can't resist! - and mention that I've trained with Tom Platz, Brian Hooper (Olympic Pole vaulter and regular top runner in the Superstars TV show); Phil Milner and Graham Ravey (Karate); Donna Hartley (and Bobby Knutt!); Sugar Christopher; a British Arm Wrestling champ (name escapes me - just a few sessions) and with and around several high level boxers, bodybuilders and strength athletes, so have seen quite a few approaches. Plus have posted to Smiffy.;)
Now, would love the chance to train with any top level MMA or boxing coach, either the s&c side or the coaching aspect. Robert McCracken or Adam Booth would be good. Also echo the mention of Froning.

I was going to say Froning but I wasn't sure whether or not Crossfit was appreciated in here. Having said that and after watching quite a few Froning / Crossfit videos on YouTube, I'm not certain I'd like to get involved 

Tbh, regardless of any opinion of crossfit, Froning IS one hell of an athlete and an absolute machine.

There's a Crossfit gym opened up near me but I wasn't overly impressed when I went for a look.
I've done some 'cardio-strength' stuff in the past (before Crossfit was Crossfit) with a S&C friend of mine which was a very similar concept i.e. a short sequence of exercises, repeated for time (15mins), as many sets as possible.
One of the circuits was something like (40kg BB) 6 x powercleans, 6 x push-press, 6 x front-squats, 6 x bent-over rows, 6 x BB roll-outs...needless to say it was absolutely disgusting and the longest 15mins of my life!

I've done similar stuff for years too, well before I heard of Crossfit. Not necessarily always the same exercises they tend to use, but a variety for sets/reps over time, or circuits if two or three put together.There's a Crossfit gym opened up near me but I wasn't overly impressed when I went for a look.

It can be hideous(!) but it's good for a mix of fitness, fat loss and strength endurance.
