After work I have been going in the gym for 20 mins, I know it's not much , but what do think I'll be best doing? I've been doing intervals on the spinning bike, but I do a bit of mountain biking about twice a week and insanity most days,so I was thinking I maybe would be better doing some upper body weights, what do you think?
Cardio-Strength Training!
I suppose it's a bit like Cross-Fit before there was Cross-Fit but it's essentially a sequence of exercises performed back-to-back as many times as possible in a given time.
For example: 40kg barbell - 6xpowercleans, 6xpush-press, 6xjump-squats, 6xbent-over-rows, 6xbarbell rollouts - as many circuits as possible in 15mins.
It's disgusting and time will never pass so slowly but doing this 2/3 times a week (different routines / sequences each time) probably got me in the best shape I've been in.

...but it wouldn't be difficult to devise your own circuits to ensure you give the whole body a good going over each week using the kit available to you in the gym.
The only problem with it is that, depending on the combination of exercises, you may need to commandeer certain pieces of kit for the full 15mins but you can always plan around that I suppose.
