I'm currently doing a couple of bag sessions a week (as well as the regular stuff). The workout is a fairly simple 12 rounds of 1:30 on, 45 seconds off (increasing the times by 10/5 seconds a week) two/three/four punch combos, with lots of repositioning around the bag. HR around peak for the whole session (according to my not-to-accurate Fitbit).

Any suggestions for how I can mix it up a bit? I also row and do a lot of body-weight HIITs on other days. I'm sure PH can offer some alternative (and probably contradictory) suggestions)

2 things you can do.

Firstly if you want to stick with boxing, then look at level changes e.g. hooking to the head and then going for a hook to the body, also jabs and straights to the upper and lower torso as well. You can also start incorporating things like bobbing and weaving and slips, pretending your opponent is throwing stuff at you and stepping in and out of range as well.

Secondly, you can start to incorporate more Muay Thai style of stuff. Things like low kicks, and waist high kicks, going higher as you work on your mobility. Also clinch work with elbows and knees. For a round, grab the bag in a clinch and just drive knees into the bag one after the other. Something like this - https://www.youtube.com/watch?v=vQ987ePz59U

edit:

One thing you can also do are power rounds, so essentially throwing huge shots as hard as you possibly can rather than worrying about speed.

edit2:

Sorry, keep thinking of stuff i've done in the past. One of the things that i always liked doing as well when i was doing 3 minute per round with 1 minute rest was to throw in 20 pressups right after the round or 20 situps, or 10 burpees or 10 knee to chest jumps. It eats into the rest period but it helps your cardio so much.
