I'm adding some lunges in to my leg day. But a little unsure of the technique. Say I am lunging with my right leg going forward. I step forward with my right leg and lower myself down, keeping my torso straight? The left leg (behind) do I keep that flat on the floor or bend the foot and rest on the toes?

When pushing up do I push forward with the left leg or is it all pushing down with the right leg and driving myself up with just that leg? I think at the minute I am rocking myself forward with the back leg and it feels a bit wrong, but pushing up with just the leading leg feels very hard.

some thoughts;
the distance between the feet will switch target from quads to glutes
don't forget different planes; side to side etc
think about split-squats, bulgarian squats, walking variants,

all good stufff

I think that might be the problem. I am very tall and take huge strides, probably need to shorten it a bit.

I have always thought it a dangerous exercise, the potential for pulling a muscle is high as it is so difficult to get in a groove.

Haven't done them in 30 years.

I do them and related exercises (mainly static lunges, bulgarians and sides), prefer them to squats as you can focus on one leg at a time and you don't need so much weight (there's a limit in my house; fine if I am visiting a gym with a friend).
