I've just been out for a couple of hours walk. I get Hayfever so I had a tablet prior to leaving but something has been bugging me yet I've never bothered to look into it or ask:

How come that I can spend hours outdoors like today, presumably where the pollen is, yet it's when I come back indoors that I start sneezing like mad?

You might not be allergic to pollen. It could be house mites, dust...anything.

I get 'hay fever' symptoms all year round regardless of weather, temperature or anything. It was so bad at one point I had to control it with steroids (Prednisolone?). Now I have a nose spray for when it flares.

Cannot for the life of me figure out what sets it off!!!

Ty flixonase aqueous nasal spray, one blast up each nostril in morning and take one Cetirizine Hydrochloride shortly after. I changed to this combination a year or so ago on pharmacists advice. Works for me, might help you out, both available over counter.
