Fluctuating Idle Mk4 Golf

The idle fluctuates quite a lot after some distance driving. Firstly when you start the car for the first time, the idle stays pretty much constantly at 1000rpm, but after an hour or so, the idle drops to around 500-600rpm and fluctuates between the two figures.
