Climate reset 2017 mercedes

After about 30 mins running on a hot day with top down, all the vents stop letting any air out, blowers working still and there’s plenty of cold air there seeping from vents, leave it 30 mins and start car again and everything works fine again.
Check cabin filter and any potential blockages that might be making things overheat but everything is as clean as a whistle.

These statements don't make sense when put together, can you be more specific?Check cabin filter and any potential blockages that might be making things overheat but everything is as clean as a whistle.
Not sure you need reset - I would try to clean the temp sensor on the HVAC unit.
It may have a little vent on the front of the unit, if that is full of dust the sensor may not read the correct cabin temp which will potentially force the servomotors to close the vents.
A Mercedes diagnostics system should be able to read the codes (if any) on the system.
Finally, sometimes vents close if the outside air system is active - this evaluates the air coming into the car, if it finds it poor it will try and manage that through closing vents. Might be worth checking that.

I removed the cabin filter to have a look and there was a sensor in that area with a metal bar in mid air, i assume this is the hvac sensor? I have the mercedes.me app and that read no codes.
On your last point, it would mean it happened once if it was reading outside air quality, unless there’s a fault in this sensor that makes the reading, seems strange everything works 100% but 30 mins after running it happens, though only twice so far, i’ll try running it again today on a cooler day and see if it happens again and if so, at what time scale.
This is an open top car and i have it running top down for the cool air but its always been fine with that and we did 3k miles in this scenario only 2 weeks ago without a hitch.
First time it happened though was immediately after following a ridiculous amount grass debris from a tractor, sat there wallowing in grass for a good 10 minutes before we could pass, so was hoping to find a blockage in the air intake side, but nada

The front sensor should be looking for air quality, in addition there will be a number of sensors in the HVAC pipework looking at the temp for control. However, the sensor I would consider would be one based in the cabin which monitors the cabin conditions and determines what flap settings are needed. I would also check it on max heat to see if the vents closed after a set period and other temp settings too.
If your diagnostic unit gives you live data it would be worth seeing what any temp sensors are saying. If one of them is clearly not realistic in the circumstances that may indicate the problem.

Are you sure it isn't just getting up to/down to the temperature set on the climate control setting?
When on auto it starts on full heat/cool with high flow to get to its set-point, and will then change to suit to keep it there.
Try setting to either full heat or full cool and see if it stays like that for longer, if so it is just doing what you have told it to do.
