At the edge of the brake drum there's a hole that goes right through, just wondering what this is?

Possibly to let you see the brake shoe wear without removing the drum?

This, To adjust the shoes, there is often a small wheel located behind the hole. you can turn this by putting a small flat bladed screwdriver through the hole and turning the wheel until the shoes begin catching the brake drum.

In the pic that's likely to be the round hole next to the one for the drum retaining screw that's got the countersink taper in it.

That would be my understanding too, but can’t tell without a close look.

The c/s hole is for a drum retaining screw.
The through hole near the edge is a lining inspection hole.
The partially drilled holes are balance drillings.
Any adjustment hole (none visible in that pic) would be further in from the edge, and of a larger diameter than that spy-hole, in order to line up with the adjuster star wheel and give sufficient clearance for the adjusting blade.

Some drums have a threaded hole used for pushing the drum off of the hub by screwing in an appropriate bolt.
