ok here's a challenge, I am currently suffering Denny's breakfasts withdrawal symptoms due to my not working for a US company anymore. Is there anywhere in the UK I can buy that weird, thin, crispy, smokey, yank bacon that I just know everyone here will loathe (Americans excepted of course)

Aaah the crispy bacon challenge.

Easy-peasy.

Method 1) Use frying pan as per usual, but find another smaller pan and sit this on top of the bacon whilst its cooking in the first frying pan. Sounds mad, but this keeps the bacon flat whilst its cooking. Use a med / low heat and the bacon will be properly crispy. Use smoked streaky for the true taste!

Method 2) Use the same bacon but cook in a hot oven between two baking sheets. Works a treat. Never fails. Etc.

Hope this helps, now has anyone got a receipe for biscuits & gravy!

Hot oven 190/200C straight on a baking tray works every time. Not so keen on the 'yank crisp' myself though, you can't put it on a fork without it exploding across the room

Sainbury's do a crispy bacon sandwich filling. Just slap that in the frying pan for a few minutes, and you're good to go!

Have a nice day, sir!

Method 1) Use frying pan as per usual, but find a small armadillo and sit this on top of the bacon whilst its cooking. Sounds mad, but this keeps the bacon flat whilst its cooking - alternatively some small galvanised nails should do the trick, simply nail the bacon firmly to the bottom of the pan (remove armadillo though). Return said endagered species to pan and use its body heat to cook and the bacon will be properly crispy by christmas. Use smoked streaky covered in baby bio and washing powder for the true taste!

Method 2) Order a small skip. Use the same bacon*** but cook in a hot oven between two baking sheets for two to three days. When the smoke has cleared from the kitchen , place the small bits of carbon lying at the bottom of the cooker in a dustpan and discard into skip. Works a treat. Never fails. Etc.

Hope this helps, now has anyone got a recipe for baboon spleen!

2 answers to your quest for perfect bacon (i.e. shatters on impact);

1. M&S do packs of it cold (both smoked and unsmoked). So just pop into the microwave for a minute or so to warm up and hey presto. I think it's usually put in with the sandwich filling or cold meat displays.

2. Forgive me for this one, but Lakeland Plastics do a kind of "bacon weight". Same idea as the amradillo but more hygenic. Put bacon in pan, place bacon weight on top (it looks a lot like and victorian iron!) and cook away, result nice flat and crispy bacon.

Johnson & Johnson market a product called 'Wet Wipes', simply take a red marker pen or felt tip and draw lines (or streaks) accross each sheet. Cheaper versions of the product should be available through branches of poundstretcher, and they probably do nice felt tips too.

THE best bacon is 'maple cured' (IMHO). Unfortunately, you can no longer get this in streaky - only back. However M&S and Sainsbury's both sell it and it's fab! As for thin and crispy, follow all the above advice but get the thinnest streaky unsmoked bacon you can find (get your butcher to slice it on the thinnest setting whilst still frozen ).

Just realised this level of knowledge sounds really, really sad!

[homer] mmm maple bacon mmm delicious mmm [/homer]
For really crispy bacon heat heavy cast iron pan with a tbsp of groundut oil in it until the oil start to smoke a little. Drop in the bacon and hold in down into the fat with a wide fish slice. Turn over when it starts to brown and repeat. Fish out when the edges are quite brown and drain on kitchen paper. Serve in a white sesame seed bun with a little tomato catsup. Which is exactly what I'm going to go and do now.

edited to add: anyone know if/where you can buy Brook's Rich and Tangy in the UK ?

what's mrsfish to say about this?

Turn over when it starts to brown .

I've tried this but can only see the bottom of the Aga.

Fish out
she's off again..

A varient using said ingedient,

Two slices of toast, generously spread one slice with cream cheese.
Top cheesed slice with good quality smoked salmon.
Top this with your choice of 'i do it best my way' crispy smokey bacon - frazzles will not do.
Spread sweet mango (I said mAngo ) chutney on other slice and combine toasts and eat - which is what I just did (I got the morning off).

Alternatively you're quite welcome to smear the cream cheese and chutney into the hair of small dogs or pensioners waiting at busstops.

Do have this on display next to the eternal bow crockey set.. they do sooo compliment each other.

Maybe we could all compare our bacon presses at the next meat (sic].

Any way, the best way to cook bacon is to get ones staff to do it - that's what you pay them for.
