3rd Car Advice!

Hey folks,
Long-time lurker here, I'm finally making a post because the plethora of help, albeit quality, that has been given in other people's threads has finally been exhausted in the search for my next car.
I'm 20, been driving 1 year, with NCB and no points. First car was a 2003 Renault Laguna II 2.2DCi estate with 106K miles. Quite possibly the worst car ever. I needed a cheap, well equipped and economic estate to ferry musical equipment over the UK with my band. I will happily admit i made a mistake buying it. I replaced that with a MY98 SAAB 9-5 2.3 LPT. Another mistake. Anyway, I've finally finished with the band to concentrate on uni work. We were due to do a European tour in September, to which i couldn't commit. Not to mention the lesbian front-woman split up, so things got awkward and i couldn't be bothered with that. So, i've taken about £5K out of it to put into a car. My line of reasoning is something like, 'Now i don't have the band i need something else which i can put my enthusiasm into.' I also need another car to replace the somewhat unreliable and boring 9-5, which is too big for my current needs also, and think i can kill two birds with one stone.
Ask any of my friends (okay, so i only have one), but ask him and he'll tell you that all I've been concerned with of late is ditching my current motor in favour of something that ticks as many boxes as possible. Hopefully i can get some ideas from you 'knowledgeable' lot if I give you a run down of the boxes:
1) Fun
2) Interesting, preferably with a strong enthusiast community
3) To be used everyday without bankrupting me (30MPG+ on a 30 mile motorway bout at 60/70)
4) To be used every weekend without boring me.
5) Insurable for circa £1500
6) Girlfriend friendly, no 2-seaters for now.
I've had so many thoughts, none of which i could realistically get insured on it seems. I've gone from E30 325i's, E30 318is to Volvo 850 T5/R's and Renault Clio 172/182's. Any thoughts to enlighten me to things i've not considered or even to change my current attitude would be encouraged and appreciate.
I realise that this is an incredibly subjective ask, and the amount of variables really make it difficult for one to suggest one car in favour of another. I'm too young to try different things out, which doesn't help.

Cheers for those suggestions. I hadn't considered the Leon. The ST170 fails to really impress me, i've heard a fair few folk saying they're not really a great step from the norm. I had considered the 330's, but i was put off them by the insurance cost and the general maintenance/up keep, especially on the examples i'd likely be able to afford. I know they're meant to be pretty fine cars though
