Selling a car to a UK Polish that the buyer wishes to export

DVLA V5c Question!
I'm about to sell a classic car that I own, the buyer is from Poland, he lives and works in the UK, says he is going to take it to Poland to restore as its cheaper to do and his folks run that type of business.
The Guy is okay, I know where he works and lives which is a few miles from me and have met him on numerous occasions.
The car whilst drivable is not mot'd and is SORN,(it is mot'able as only did 3 miles since it was last mot'd 3 years ago)
I have a feeling he is going to turn up and drive it to his UK address, Insurance wise he has fully comp, maybe/not covered I did say its not mot'd and is SORN that if he gets stopped or breaks down that will be his problem.
What I don't want is any come back on me, most of the roads around me have ANPR cameras he is bound to pass some on his journey to his UK address.
Regarding the V5C do I just fill the section in with his UK address? I don't know if he's going to take it to Poland within a week month or year therefore I can't fill in the permanent export part?
How should I go about protecting me from DVLA comeback, I'm going to write a bill of sale, "sold as seen" no mot/sorn with date and time and get him to counter sign.
