Sensible car or sporty car?

Does anyone get conflicted between the two?

Everyone does.
You just have to buy two cars and it solves the problem... which I am in the process of doing right now. Getting a cheap BMW 3-series as a runnabout and maybe a MR2 for a sporty drive. The MR2 is weak juice, but for £5-6k you can get a low-mileage car, with hardtop, leather, and heated glass window.

Currently somewhat torn between a nice sensible super-cheap Pug 106 diesel or a Mk1 MX5.

It's all about circumstance, if you want it and can afford it you will, if you want it but can't afford you'll find a way. And the bike scenario? Two totally different experiences unless your talking about keeping an R1 and an Atom "Oh, I'll just get something normal to run for a few years and save money while I build up some NCB"

Speaking as a guy who has owned two cars for a number of years, the problem with it is that usually when you stumble across a road like this that happens to be empty you'll be in the wrong car because you needed to do something practical that day or bring someone somewhere, its very rare planned outings in your pride and joy coincide with perfect conditions, an ideal and empty road and you being in the mood for a hoon. 
I actually think that one pretty cheap but fun car is better than two and provided you don't regularly need it to be practical you can hire a van for load lugging, or maybe get something practical and performance oriented like a fast estate. The cost savings of having one car over two can be considerable too.
ETA: to the OP get something that balances sporty and sensible, you know what your needs are get something that meets them, but I'd say whatever you get just make sure its fun.

go for itI love mine (S60 D5) it keeps up with my T5 now, and does more than double the MPG in all situations
I bought it as a "hack" but I am so impressed with it it has all but replaced my T5 as my main car... my other half uses my T5 now
just don't bother with the 1.9VAG TDIs, the engine is a real let down (even the 150) after driving any of the bigger engine Diesels
BTW ignore the Diesel hater idiots on here
