Geometry Setup

I'm interested in getting the geo sorted on my MR2 but I just wanted to get a bit of an insight into what kind adjustments are made. How does a proper geometry setup differ from say going to your local garage and having the tracking/alignment etc adjusted? Also, can anyone recommend a good geo centre in the south/south west.

Centre Gravity Not cheap but amazingly good!
