Im trying to plan a trip to the ring for me and the family (all petrolheads 
) but am at abit of a loss as i dont know the area/where to stay/where to eat/ what peoples experiences have been.

knowledgable people...what are your recommendations on good/good value hotels? nice places to eat?

We liked this place so much the 1st time we went. That we stayed there the next few times as well.

All the hotels in the area that I've stayed in have been clean, tidy, fairly basic and all do a good continental breakfast. That's all you want or need.
Hotel an de Nordschliefe is nice, Blau Ecke a little more plush and pricey, though it's in a good area of Adanau.
The Hotel Zur Burg is close to the PK so be tempted with there next time.
Sliders Guest House is also great, Bren is a great chap to know around there and the banter outside over a beer is great. Cheap too in my experience though really more biker biased. Be my first choice if I started to dress up like a Power Ranger and had a penchant for holding people up in corners

Another vote for the Blau Ecke. The new wing they've built is lovely too. I can't remember if they've put a new car park in though, the old one was very tight and deeply rutted. Pistenklaus do indeed do lovely steak, but I'm not sure it's worth what they charge.
I'd recommend hiring a track car as well. I took my Elise a couple of times before I just got too worried about it, so hired and loved it (I used RSR, who were great, but there are other companies there with very good reputations as well). You get insurance with the hire, and if you crash it's just money, rather than the emotional torment of wrapping your pride and joy round the armco.

This, although I'm not sure if the new owner is on top of updating the site. The Altes Forsthaus is a good budget choice. It's only a few hundreds yards from the main entrance, it's friendly and it's great value with reasonable food and excellent beer. It's not particularly luxurious (at least not the rooms we stayed in) but in other respects it's a great choice.

Agree with you there on the PK. I think it's worth it in terms of a holiday treat, though I'd never pay the amount they charge in London.I'd recommend hiring a track car as well. RSR are incredibly dis-organised, best to use http://www.rent-racecar.de/english/index.htm. Theo and Heide are really on top of their game.I once turned up at RSR only for them to deny any knowledge of my booking, until that is I produced copies of the emails. Ron Simons is a nice guy and very knowledgable but let down by a poor memory and zero back-up from his colleagues, a real shame.

We stayed at the Ringhaus (Altes Forsthaus) this year and last year. It's clean, cheap(ish) and very close to the public entrance. The food is reasonable, as is the beer, and the staff speak great English. The beds are a bit short for tall people though, and the pillows are the lumpiest thing known to man - more like a bag containing hundreds of smaller pillows!
If heard good things about the Burgstube hotel. Will be trying that next year.

For lunch we visited the cafe next to the Breidsheid entrance. I forget the name. Very cheap food from the takeaway and the staff speak good English. My lunch generally consisted of 3 Bratwurst in rolls, which was enough to keep me going and cost around a fiver including a drink!
For car hire, my friend got a stage two Swift from Rent4Ring. Great car, and a great bunch of guys to deal with. They're based in Adenau. We did have a slight issue that they didn't have a car for him because a few people had crashed the day before! They went out of their way to sort one out for him though.
My best advice for a first timer (take this as you will as I'm hardly a veteran with 2 vists and 6 laps under my belt!) is to get Forza or Gran Turismo 4 and get as many laps in as you can. Whilst the games are nothing like reality, the layout is pretty accurate, so you can learn which way the track goes and which corners are slow and which ones are fast. Knowing this means you can concentrate more on your lines and other traffic without worrying about which way to go.
Had my friend done this, he might not have gone off-roading at Adenauer Forst!

I'd sooner the €35k than the £100k+and climbing being faced by someone who's insurance are claiming the 'ring is a "prepared course" and not a road.Risk limitation is the name of the game. Plus I'd rent an Alfa/Clio where the Excess is €8000, and the rental under €500.
