Would this tyre be very silly on a E38 740 for winter?

Yes. I run the Continental Conti Winter Contacts 830P's on a Lexus LS 400 and they are amazing. £130 a corner.

What I was also wondering (and I am genuinely daft enough to do this to my beloved sport) was would the extra nobbly bits get in the way of the wheel arches and suspension or is all that factored into the tyre size you see when looking them up?

Having thought about it would these nobbly tyres even be any use in ice and snow? Are they mud tyres or something?

I would imagine a proper winter tyre would be better, and the right sizing too. Would look good though, if you give the car the once over with some matt black or khaki green.

Even assuming that you could find a size to fit (doubtful) and of the correct speed rating (ha ha) they would be rubbish on anything but fresh snow (which they would be brilliant at).

Aside from the matter of compound, the surfaces of the tread that touch the road are very plain - for compacted snow and ice you want to see sipes; lots of little cuts in the tread. Look at pictures of winter tyres and you'll see. I ran MT tyres during last year's cold snap (similar-ish to these) and was underwhelmed with them.
