CPI, Cells Per square Inch is what its all about.
Imagine your catalytic converter as a section of your exhaust stuffed with wire gauze, honeycombe style, with anywhere from 600 - 1200 little holes per square inch. Thats a standard, OEM cat.
A 'sport' or high flow cat could be 400, 200, or even 100 cpi, so they flow much better, but by their very nature, might not burn off as many unburnt hydrocarbons as a standard cat, but should still be within limits.
