'Driving experience' days for a Mum's 60th

My old Mum is 60 late this year and we've decided to get her a 'driving experience' as one of her presents which she can do in 2012. She's a bit of a car fan on the quiet (I learnt to drive in her R5GTT and she's had a string of medium-hot hatches over the years), when my sister did a day in a 355 at Thruxton she mentioned that she'd like a go and a couple of years ago did a day's driving all sorts of vehicles (HGVs, armoured personnel carriers, buses etc.) at Bovingdon Tank Centre for charity.
There's a whole heap of these kinds of days, has anyone got any recommendations on the best ones? I think she'd be more interested in road cars than single seat racers and preferably one with a couple of cars and then a few laps in something special.
Budget isn't necessarily a limiting factor - south of England or Midlands would be best.
If anyone has any specific recommendations of good value days, it would be really appreciated.
