Coolant seems to get up to temperature much faster.

Oil will come up to temp far more slowly than the coolant. My coolant will be up to temp in under a mile or so, but the oil can take up to 5 miles before I give it any revs.

As said, coolant gets there far more quickly. I don't think I've ever seen my oil temp gauge in the middle, though coolant gets to and sits at 88'C (90 is the middle of that one).

Oil should take longer to heat, due it's higher viscosity than coolant. It will also cool more slowly too.

After my coolant is up to temp (3-5 minutes depending on how hot a day it is) I usually give it at least another 5 minutes before using any real revs. That said, I do have an oil temp gauge too.
