Correct protocol when putting a deposit on a car?

Hi all.
I am purchasing a car, under the condition that when I pay the deposit the mot (which has expired) will be done, and anything needed out of his pocket. When that is certified, the remaining balance will be paid.
Ive already been to the guys house so im not overly worried hes going to run off with my deposit.
What (if anything) should i get in return for my deposit?
Obviously I was thinking of drawing a very quick contract, but anything else? Is there any standard practise for this sort of thing?

Just a bit of paper with something along the lines of "Deposit of £x received for [make] [model] [reg number], balance of £y to be paid on collection " and signed by the seller. You may want to include the stuff about the MOT as well.
Orbalance payable upon colletion providing agreed work ( whatever you agreed ) has been carried out.
