How do exhausts create different noises?

I'm in a dilemma, looking for a replacement exhaust for the after market "straight through" back pipe on my Jag XKR which drones badly.
The alternatives are a bog standard Jag replacement which gives no V8 burble or a highly expensive stainless steel job.
However, my question is: the manufacturers of these after market exhausts claim they give that satisfying rumble, but how do they achieve that? Apart from the stainless steel, what's the difference to the regular exhaust? Are they somehow "tuned" to create the desired noise?
