Cheap to insure, good for motorways, and interesting?

Hello all. I normally lurk much more than post, but here's a thread.
I currently drive a 1990 Mini Racing Green, coming up to 100,000 miles. I love it to bits, but having recently been stopped on a condition of vehicle check due to it crabbing (it was doing that?) I am seriously considering selling it for something else.
I thought about a Land Rover Discovery V8 with an LPG conversion because that would be fun, probably more refined on the motorway (or at least less thrashy than the Mini - 4,000 RPM in top at 70...), capable of hauling all my mates from Nottingham to Hastings for a weekend and it is cheap to insure for a 20 year-old male like myself.
However, I realise there may be better alternatives. Does anyone have any suggestions?

A Volvo S/V40 1.8 or 2.0. Comfy for motorway driving, reasonably economical and insurance for them tends to be a fair bit cheaper than an equivalent German model.
If insurance permits, then S60 could be worth a look too, excluding the very rare Bi-fuel models, the whole range is five cylinder turbo engines that all give decent performance and economy's not horrendous either. The comfort and kit levels go up a few notches too, great cars for the sort of use it sounds like you'll be putting it to.
