Top 10 cars that you would most like to drive...but haven't!

Not necessarily cars you want to own but would like to try and haven't had the opportunity to yet. Most of mine are quite modest actually but I am curious to see if they live up to the hype/iconic status bestowed upon them!

Noble M12 (a friend has one so that may actually happen)
MX-5 (to see what all fuss is about)
Rolls-Royce Phantom (to see what ultimate waftability is like)
McLaren F1 (never going to happen)
Ferrari F40 (see above)
E-Type

I want to drive a Merc SEC. Badly.
I will be buying a second car soon, something comfortable, economical and opposite to my RX-8 in terms of driving style.
I want to drive it, I want it to be terrible so I can stop looking at the classifieds and concentrate on something economical and sensible. But I get the feeling I'll just want it more.

There aren't many (any?) cars I wouldn't try at least once but there are certainly some that I'd make a more determined leap for if you threw the keys in my direction.
1. Bristol 405
2. Bristol 411 - I've loved Bristol cars for a long time, had a couple of passenger rides but never had the chance to get behind the wheel. So one six-cylinder Bristol and one V8 it is.
3. Bugatti Type 35 - to see if it is as truly delightful as people say.
4. Citroen SM - possibly the most beautiful expression of Citroen's technical philosophy. I really want to try vari-power steering, centre-point steering geometry, zero-travel brake pedal and the sound of the Maserati V6.
5. 1970 Plymouth GTX 440, auto - any muscle car would do just to get a feel for a time when it was fine to build a car with way more power than chassis or brakes could handle.
6. 1976-84 Cadillac De Ville - no power, no performance, no handling and nothing like anything you can buy today.
7. Ferrari 275 GTB/4 - modern Ferraris don't do much for me, but I'd love to drive a 'proper' 1960s Ferrari, one of the cars that made the company's reputation.
8. Morgan Threewheeler - the idea of a trike is very appealing and while the original Morgan Aero has plenty of charm the modern version is probably easier to get on with for the novice.
9. BMW M635 CSi - I've always admired the original BMW 6 Series, one day I'll find out if the reality can live up to the dream.
10. Bentley Brooklands - A traditional Bentley with the turbocharged Rolls-Royce (ish) V8 to see what the closest thing to a modern-day muscle car feels like.

I could create a long list of exotics but that would be the obvious answer, below is a short list of cars I've alwasy wanted to try but never had the chance. . .

Yes please!Car-wise, I'm more interested in trying types of adventure rather than specific examples of car.
(1) I'd like to try something like an E30 or a 200SX on an airstrip or round a track, just learning to hoon around an RWD car at speed for a few days without being too worried about damaging something precious.
(2) I'd like to drive a soft-top across Europe.
(3) I'd like to give an HGV a go.
(4) I'd love to try something like the Baja 1000.
(5) I'd like to take a supercar on a trip from the West Country to Scotland and back without using motorways. Preferably with 2-3 buddies doing the same in similar cars.
