Does it have self adjusting back brakes?

If you mean front, yes. If you mean rear it may have shoes, but regardless they will be self adjusting.

I have no idea - some sort of an issue and related to part ordering, which I don't quite understand if they are all self adjusting?

Don't know, I can't think of a modern or newish car that doesn't or wouldn't have self adjusting brakes.

Most modern drunm brakes are self adjusting to an extent, as they wear they move out (in theory). In practice the adjusters are pretty crap.

Part of a 'full' service should involve removing the rear drums, cleaning the whole lot, greasing the backplate, grinding the lip off the drum and finally adjusting the shoes up

Totally agree with this.

You could also slacken off the handbrake cable(s), adjust the shoes up manually, then adjust the cable to give the correct handbrake operation, as it's not uncommon for people to compensate for shoe wear by adjusting the handbrake cable.

There are two different types of shoe for the rear, one type is lucas and I can't remember off the top of my head what the others are. Pull the drum and look on the shoes as to which they are.

As for the adjustment yes they are auto adjusters but still need to be initially adjusted when first fit.
