How long should it take to replace 2 calipers and new pads all around? The car's a Mazda MX5.

Say at £25/hr labour, would I be looking at an hour for the pads and an hour for the calipers?

I don't want to get conned, I'll be going to a small local garage so I'd like to have an idea on what to expect.

Small garages are typically £35-50 per hour (in my experience).

No more than an hour's work though.

ETA: though having said that, you'll probably get billed 1.5 hours to ensure billable hours are covered.

As long as the caliper bolts havn't siezed and don't snap off when undoing them it should be doable in 2 hours.
