In my younger days I did this when selling the ex's Ka about 15 yrs ago.
Best and easiest option is write a letter to the DVLA stating that from the date it was sold you are no longer the owner of vehicle xxxx reg number xxxxx , date it , name and address it , and sign it. I took the letter to my local DVLA office and they were happy with that.

wait and see if the letter of change of owner arrives from the dvla ( give it about 3 weeks ) if this dosent turn up phone them and ask why not, Post does get lost / stolen from time to time.
A cautionary tale my friend sold his wifes car without doing the v5 ( he just gave it to the new owner ) they stopped getting the speeding and parking tickets 18 months after they sold the car and a lot of leters to prove they had sold it.
We even got a speeding ticket for an old astra we sold 8 months previously even though we had sent of the docs and recieved the letter from the dvla informing us of this 2 weeks after we had sold the car, luckily ( for us ) a copy of the letter and a strongly worded one of our own soon got the speeding ticket removed.
