galaxy s2 help wanted

Evening Everyone
I need some help with samsung s2 and samsung hs3000 bluetooth headset.
Both orange and samsung cannot sort this problem,and I've rung both several times over the last week and samung have promised to ring me back on 4 occasions ,and have not !
All I want to do is be able to press the talk button on the headset,speak the name of the person I want to talk too and talk to them.
I don't want to take my phone out of my pocket and press voice on the thing or input the contact myself if its pissing down when I'm fishing .
