Best way to insure?

In the new year I will be getting a daily and getting a workshop to store my toy.
The toy (2.0 16v Ibiza) will be used very little on the road (but needs to stay road legal) and obviously be insured, so whats the best way to go about it?
Road milage will be less than 1000 a year, I would ideally like an agreed value too and still be covered for fire/theft while locked away in the workshop.
Are there any types of insurance (rally car?) that would suit me?
