Quick question to answer my wandering mind, what was the last carburetor fuelled car sold in the UK?
Have tried Wikipedia but it only lists the U.S and Asia

That would make sense, they still sell the Niva with a petrol lump, wander if that is carb'd?

Minis were still sold with carbs until the mid 90's.

Until the SVA came - about 10 years ago - a lot of low-volume manufacturers still used carbs. You can probably find a Westfield or something that was supplied with carbs from the factory less than a decade ago.

Admittedly not strictly a production car, but it is in the UK. Going a bit further off topic, NASCAR has only switched to EFI this year. Bless.
