At £500 the a/c won't work, so I'd recommend an ELX (only two trim levels, ELX being the top one) as you get twin tilting glass sunroofs.
You want a people carrier really - because I assume you'll have some luggage and 6+luggage in a Disco or estate is impossible.
Previa (or Estima/Eminas/Lucidas as the imports come) are dead cheap and last forever - MASSIVE inside, reliable and cheap.
If you're desperate, the Fiat/Peugeot/Citroen 8 seater bus thing is probably similar (but won't be as well made or reliable)
With your budget it's a matter of what's available locally tho - given travelling isn't really "in budget" I guess - or are you willing to spend a lot just to get a cheap car?

I considered a Limo but I thought the people carrier would have more room and easier to find in budget

I got an average of 72mpg out of mine over a few miles. Mixed driving gave about 45mpg-ish.There is something wrong with your friend's car, or their driving style. Or they have the petrol one.

They're certainly easier to find though!
Multipla has 6 individual, full sized seats, all individually adjustable. You can choose to mount them with a bigger boot or more legroom. I'm 6ft and never had a problem with headroom.They're certainly easier to find though!
