I have a Kleemann S8 SLK for my daily driver. I use it almost exclusively on public roads rather than track days. I do drive 'enthusiastically' from time to time. I need some new tyres (surprisingly).

Criteria : Loads of Grip, Last forever, Cheap as chips, moon on the stick etc

What is there that can take 590BHP when playing and yet still last a reasonable length of time when most of the time is spent driving normally?

When I asked a local tyre shop and mentioned the horse power they all start listing semi-slick track tyres. There have to be people on here who drive reasonably powerful cars as their normal cars rather than just to, from and on tracks.

Advice please

510hp Jags run Dunlop Sport Maxx somethingorothers seemingly without exploding into fireballs?

Just make sure the load (a number) and the speed (a letter) are appropriate.

No idea for those power outputs.
Rears are 275/30 ZR19. Kumho Ecstas do that size as do Uniroyal Rainsports for under £170 a tyre.
The Michelin Pilot Sports will cost you about £250 each.
There is also the Toyo variants which work well on Mustangs so maybe on yours too.

I had Sport Maxx on the Mustang and found them great. I've put Pilot Sports on the front so will probably match the rears at some point but they are not cheap.

Mustangs have similar sizes to that and we get good reports for the Toyo Proxy Rs I think it is.
