I overfilled it a few weeks ago and wished for some oil burn. 700 miles later its down to the 'min' mark but thankfully isn't dropping any further.
Any ideas?

Any smoke from exhaust?
You are either burning it or losing it.

Are you absolutely sure it is the correct grade and type of oil too?

What were the other two wishes?

But it drops to min then stops dropping. Is it maybe engine seals or gaskets?

I could be very wrong on this, but with my oil woes recently I believe at least some cars dipsticks only represent ~1 litre of oil between 'min' and 'max'.

Some manufacturers have recalibrated dip sticks in the past. Make sure yours is the correct one.

If it doesn't move from min, I wouldn't worry about topping up. Just keep checking it as part of the normal maintenance.

Diesel? DPF? Could be regenerations dumping diesel in the sump.
