Most fun car you've ever driven?

Really hard to say.
One of my MK1 MR2s was huge fun. My memory may be clouded by it being my first "sports" car. But you could chuck her about and suddenly the sewing machine behind would step up a notch and away she'd go...
My MK11 MR2 was I think too "bland" to be really fun.
My Elise, well, I think the sheer grip has to be experienced to be believed, but I think perhaps the lack of comfort negated a fair bit of "fun".
My 5.0 Chimaera makes me grin just switching her on. But I don't quite corner her in the same way as an Elise/MR2.

Racing car: '98 Ray FF1800 in F4 spec - just the most lovely chassis and a very strong engine. It was Anthony Davidson and then Antonio Luizzi's car in FF, but then upgraded to F4 spec with F3 slicks, undertray with venturi, wings and engine mods. An onboard lap of Snetterton
Road car: My Lotus 2-Eleven (which is why I bought it!). Some onboard laps of Silverstone
Honourable mentions must go to my Caterham Roadsport VVC, which ran rubbish tyres and had loads of torque low down from the VVC engine so it was hilarious fun, Caterham R300 with the roller barrel throttle k series engine, just because they're so damn amazing; my racing Metro, which had a beautiful setup and would do whatever you wanted in a corner; and my AX GT, which was totally standard but they really did handle beautifully.

My Alfa 164 Cloverleaf was an aural event and handled pretty well and was fairly rapid, Suzuki Swift Sport is great to Chuck about but no fun on a long drive..... honestly the car I do look back at and wonder if it was really any good was a Cavalier 1600 GLS of 1984/5 vintage which I bought in 1992 and did 40k miles in. It was quick, handled sublimely, had the best,most driver focused interior, I was young then and I now wear rose tinted spectacles for viewing the past.
That's a very difficult question to answer. The most fun I've had whilst driving (on the road) has probably been in the Elise, but that's mostly because I've driven the thing so much. It's not the most fun car I've driven though (by some margin); I think that accolade would have to go to one of the older Caterhams on rubbish tyres for the combination of a beautifully balanced chassis, ridiculously well judged controls, and very little grip.
