If you want to use most of your budget and a bit of excitement too, TVR 350i

With some heavy haggling you could probably squeeze an early Monaro at your budget. They're pretty basic and unstressed, not a lot to completely bork you.

The GS had a brake booster issue that came with an eye watering repair bill. LS is the way to go, any other suggestions will have been clouded by fun or cool factors which have nothing at all to do with the OP's brief.

Very reliable Chevy engine and they come in rhd also!
But may have to up the budget slightly

My partner had the v6 ls, nothing ever goes wrong! Sure the v8 is the same, warranty company almost didn't feel the need to charge us!

I'd say that isn't risky in the slightest. You could sell it in bits for a massive profit even if it broke instantaneously. If you couldn't be bothered you could scrap it for more than the purchase price.
