What model is it to make it rare?

Eunos is just the jap name for the MX5 so there are millions of Eunos models around. In less it is a RS or S special it's not that rare.

I have to say I'm largely indifferent when it comes to mx5s so im not the best person to ask for advice on how to make one interesting as I will only answer turbo or supercharger.

Don't mod it, there's enough modded to death ones around.
They can drift well enough in stock form, though good coilovers help, especially since original shocks must be competely dead by now. Please PLEASE don't stance it though.

I just did a bit of research and found that it's a 'G-Limited' Edition. Ring any bells?
