I'm looking to start my own YouTube channel which would involve me driving various different cars that I don't own. I don't currently have my own car either.
Is there a type of insurance out there just for this or is it a case of having to get a car myself and making sure it has DOC on it?

DOC cover is nearly always only 3rd party so if the cars you are driving have any sort of value, you could be facing a big bill if you damage them.
It is also really intended as an occasional thing, rather than something for regular use.
Perhaps some sort of "trade" policy like garages or dealers use would be more suitable, I would assume you would need to be a company though. Setting up a limited company is pretty simple.
There must be other people with similar needs (though not necessarily for filming) so there may be suitable policies out there.
There are fleet policies that cover the driver rather than the vehicle, but you have to notify the insurer to "add" and "remove" each vehicle so you are covered.
Have you spoken to any specialists or brokers?

If this is just a passion project or an 'earn a few quid for beers' type thing then it will cost you a fair bit.
If the intent is more professional then as Plyo mentions, setting up a Ltd company is your best bet and depending on the business cover you get, the insurance for that 'should' cover you for specific filming projects up to a point but do check on the extent of this.
Filming is part of what I do and my normal insurance covers me to operate a vehicle for the purposes of filming which, in plain English, means turning up at a shoot, driving and filming and then leaving.
What it doesn't cover me for is collecting a brand new Lambo, sticking a Go-Pro to the windscreen and going off for a weekend hoon. Sadly!

I think Jayemm or the car guys covered this briefly. For privately owned cars you have your own basic insurance up to a certain level but either up it for high value cars for a day or the owner adds you to the policy. For manufactures cars i think your covered by their insurance.

When I saw the thread title, I thought you were looking for a YouTube channel that was all about car insurance. Which might not be a glamorous, but would certainly be more original and would probably get more views.

Don't expect it to be cheap, but this should do the trick - You may want to double check policy wording as to how commerical motives impact the cover; It's sort of a grey area (Filming and recording for fun) vs filming for profit.

It's very much a catch 22 situation. Very few insurers understand this to give you a "proper" policy, and those who do will want to see a demonstrable track record of you not bending other people's cars.This was from memory so stand to be corrected.
I called a few insurers up and it doesn't look like any will allow it on a standard policy. Also called a company called Tradex about Motor Trade insurance. These are going to give me a call back tomorrow to see if it's something they would allow so I'll see what happens with that one. Having 5 points on my licence probably isn't going to help things either
