Looking for a block ideally with some high quality ph director grade knives that will last a generation, any recommendations?

Dont buy a block, buy 2 very good knives that will do all you need.

I've had the budget versions for over 10 years and they still look new and are easy to get to a razor edge

I do like Global knives. Nice weight and razor sharp.

I prefer Wushofs myself. I have some of the Ikon classic range. I store them on a magnetic strip rather than a block.

Yep, well known supplier. Stupid low prices in that sale!!

ETA: competitively priced, looking on amazon some are only a little more but definitely cheaper than they used to be

Try globals before you buy. I had a few but switched to Wusthof as they felt more comfortable when chopping

This, or start with just a really good chef’s knife and go from there. Wustofs are a good starting point

- One big (c20cm) chef’s knife. This will double as a carving knife.
- One small paring knife (10-12cm).

Hand wash them. Store them carefully. Find a method that suits you to keep them sharp.

Plus a serrated bread knife and you’re done.

Knives ought to be a sticky it comes up so often

Seems to boil down to

Cheap Euro - Victorinox
More Expensive Euro - Henckels, Wüsthof

'Cheap' Japanese - Global
Sub £100 quality Japanese
Expensive esoteric Japanese.

Somebody says Sabatier and gets shot down

All the knives mentioned in the thread are great but there is a world of difference between the way Global and a Wüsthof feel in your hand. One is really light and the other quite chunky. I like them both for different jobs

Agree with those who say a block is a waste of time you'll do 80% of work with the one you like best and 15% with the next favourite.

I've not looked at the UKON range, all mine are GS and 20+ years old but still get a bit of use.

When buying good quality kitchen knives thought also needs to be given on how to keep them sharp.


A good knife will soon lose its edge and become an expensive paperweight that is not fit for purpose if it is not looked after properly

Yeah smazon themselves, shop was named the global shop.
They were similar priced as other suppliers, if they were like £80 I'd say fakes.

Ever a sucker for kitchen toys I picked up one of these for work the other day. Fed up with being the only one who can sharpen knives so thought I need something fool proof for others.

I also ordered a set of polishing stones (1000 grit) from Zwilling as the stones it comes with are 150/360 grit and even work knives only need the edge maintained.

Just tried it on a few knives and it actually works! Put a fresh edge on a couple of knives I would consider blunt. Can always to go a step further but it saves getting out stones and strops every few months.

IMO worth the money although even at £45 you need to spend another £15 direct with Zwilling to get the polishing rods.
