V5/Insurance When Car Is A Gift?

I'm picking up a car later this week which I'm hoping will be a surprise gift for someone else. What's the best legal way to go about this in terms of the V5/insurance? Should I complete the buyer bit of the V5 with their details and just temporarily insure it like any other car - obviously stating I'm not the registered owner?

If the person is someone that you are likely to be with for a long time, register and insure in their name.

It's not for the girlfriend (she's already got all my money ) - it's a proper gift not a loan.
