I need to press the hub from the wheel bearing on my E39 and press a new bearing back onto it. I popped round the local industrial estate and the first place I popped in said 'sure, you can use my 30 ton press and do it yourself'

What would be a polite sized note to slip the bloke?

I agree with others, a whack of beers and it keeps you in the good books incase you ever need anything else done! Dont get carling though, I was given carling as a leaving present in my last job. They obviously hated me.
