Intake temp gauge queries

Hi all, can anyone with a background in electronics/data monitoring etc. tell me whether you can use a digital water temp sensor (of the type you get in aftermarket automotive water temp gauges) to effectively monitor the temperature inside an inlet manifold?
The manifold itself would be pressurised by a supercharger up to around 10 psi above ambient and would also have a reasonable amount of fuel injected directly into the air as it enters the manifold, so the sensor would be sitting in a pressurised air/fuel environment.
