Taxing a SORNed vehicle

My camper van has been SORNed over the winter, it's having its MoT done today and I'd like to get it taxed so I can use it over the long weekend but obviously I want the tax to start from the 1st May so I don't lose a month.
The DVLA website says that you can tax a SORNed car 2 days before the beginning of a new month, with Friday (29th) being a bank holiday do you reckon I'll be able to tax it tomorrow (28th) for a 1st May start? Will it just be down to the discretion of the post office?
