As per title I'm looking to insure a new RS. Who are you using and what sort of premiums are being asked? Do any of you have Trackday cover included? TIA

Try Locktons. I'm paying £1100 which includes track day cover, though with Porsche organised events only. Policy is underwritten by Chubb which means that you have total peace of mind.
