Storage and tyres over winter

Hi all,
I am finally happy with the handling on my 991.1 GT3, three track set ups, a number of warranty checks and wheel balances. I always felt like something was not quite right with the drive train and at higher speeds it didn't feel great. Handled okay, every one who drove it said it was fine.
A new set of tyres and its a completely different car, night and day, the car is a 14 plate 7k mile car, I bought with with 4k miles on in 2018. Pretty sure the problem was the car standing unused. Ive read the advise, put old tyres on over winter or a spare set of wheels. Not quite that easy with no spare tyres no spare wheels centre locks and no space !
Any advice regarding pumping tyres up, those 'chocks' Have seen and any other tips. ?
