Road tripping! Redbull Ring, Croatia, Austrian Alps, Black

Hi everyone.
I am planning a second road trip to europe in my GT3. The route is planned but I don't want to miss anything so if you have any recommendations or diversions give me a shout and let me know!

Its 2,643 miles in total passing through 5 countries and of course stopping at the Nürburgring and hopefully a track day at the red bull ring and we are allowing 16 nights to do it all so plenty of time to get of the beaten track.
Proposed route is:
Rotterdam – Nürburgring
Nurburgring – Regensburg
Regensburg - Redbull Ring
Redbull Ring track day – Maribo
Maribo – Zagreb
Zagreb to – Hvar
Hvar – Optajia
Opatija to Grossglockner
Grossglockner to fussen via Hahntennjoch via Innsbruck
fussen – Lake Constance
Lake Constance – Black Forest - Baden Baden
Baden Baden – Rotterdam

I have no suggestions on the roads, but...
Zagreb - the best evening bar that we found was Mali Medo, the best restaurant was Agava. Note that they did still allow smoking in the bars, so wear your worst clothes
Personally I would include a stop-off in Ljubljana - a great town for bars and dragons. Castle is well worth a visit. And then I presume you know about Lake Bled.
But be careful in Slovenia - if you go to the bank, leave your gun and ice-cream outside.
