I was always told that insurance and warranty was the issue with doing that as the car was tested/certified as a two seater?

That was always Porsche's reason for not doing it, but I think the UK are far more amenable to car modification than the EU is ...

That they are Porsche parts fitted to a Porsche chassis that already has the original mounting points for these parts, making it similar to many other Porsche cars that are already insured without question ... should make give anybody a strong argument, but worth checking.

Once safety is assured, if the DVA were advised I can't see any tax status changes for their part.

I think I saw someone drive past with a 992 GT3 with seats/kids in the back the other day. A few mins later saw a Guards Red 964 RSR and then a blue 964 cab.
