Is there a way to find all the posts a user has made in a topic? Clicking on their post history will display the topic name as a single entry and then show eg. (8 of 800) in brackets after it, signifying the thread has 800 posts in total and they have made 8 posts across the different pages, but the link only takes you to a single post. Is there a trick I'm missing to (easily/quickly) find all the others ?

The only thing I can think of is starting on the first page and using your browser's search tool to find their name. This will enable you to progress through their posts on the page. Of course, it'll find all the posts that they're quoted in too.

A simple work around (i think) would be - in forum preferences under 'page length' the maximum pages are 80. If there was an option to set that to 'all' then a user name search would highlight all their posts?
