Apostrophes disappear when editing a post on mobile

Bit of a weird one this.

If I make a post on my phone, and then try and edit it, when editing it all of the apostrophes get removed, leaving a space where they should be.

To emphasise this point:

I ll well they ll they re would ve could ve should ve.

I m on iPhone 15 Pro Max, using the native Safari browser.
